How to Rehydrate Sundried Tomatoes in 2 Easy Steps

Hidden in the back of your pantry, is it possible that you have a bag of dehydrated tomatoes that you bought on impulse, only to realise later that you have no idea how to rehydrate them? Go get them now. It’s really easy, and you probably already have all that you need on hand.
Rehydrate Sundried Tomatoes at Home
Red wine vinegar and water is all you actually need to rehydrate sundried tomatoes. With a few sprigs of fresh herbs, crushed garlic cloves, capers and olive oil, you’ll turn them into a gorgeous gourmet jar that’s good enough to give as a gift.
Here’s how it’s done:
- Using a pair of kitchen scissors, cut the dried tomatoes into the size that you want. Soak for 24 hours in a half/half mix of red wine vinegar and water.
- Drain and pat dry with absorbent kitchen paper. Pack into jars, along with a few sprigs of fresh rosemary, basil, thyme, capers and chunks of crushed garlic. Cover with olive oil. Done.

How easy is that? I almost always have a jar of these on hand. They’re great for antipasto platters, and they’re brilliant with boiled eggs. They’re also an easy way to turn a can of tuna, mackerel or sardines into a meal that’s a little decadent. Because the flavour is quite intense, they go well with delicate foods such as ricotta and mozzarella. And they’re wonderful paired with Basil Pesto.
This is one of those things – like making homemade mayonaise – that once you know how easy it is you’ll wonder why you’ve ever paid so much money for the pre-packed jars. So little effort, so much taste.
